Appearance : Small white stems with small green leaves

Taste : Subtle light and crisp with a cabbage finish

Nutrition : Broccoli microgreens are dense with all the vitamins and minerals as other microgreens, but they also have an added health benefit of a compound called Sulforaphane.

When compared with the mature plant broccoli microgreens have 10-100 times the content of glucosinolate concentration per serving

Glucosinolate – precursor compound to sulforaphane; found in raw cruciferous vegetables

Sulforaphane – works as a powerful antioxidant that works on repairing damaged cells

SPECKLED PEA MICROGREENS

The good stuff

Appearance : Large green stem with multiple large green leaves. These greens are harvested a little bit later with when the sprouts begin to show tendrils on the tops

Taste : sweet; crunchy; similar to mature plant

Nutrition : Speckled pea microgreens are dense in vitamins and minerals similar to other microgreens. Speckled peas have a higher protein content than some other microgreens. Pea sprouts have also been known to contain phytoestrogens.

By weight pea sprouts are one of the highest sources of protein compared to other microgreens

Phytoestrogens – compound found in pea sprouts and something being researched more and more each year as a way to fight against breast cancer; heart disease and osteoporosis. 



RADISH MICROGREENS

These sprouts are spicy

Appearance : Thicker stem than broccoli but thinner than pea. Diakon radish (Left) will generally have white stems and green leaves however there may be some purple in the stems. Rambo radish (Right) will generally have a deep purple colored leave and stem

Radish sprouts work best in raw applications and are great to add a splash of color and a dash of flavor

Taste : crunchy with a spicy finish

Nutrition : Radish sprouts are dense in vitamins and minerals. These sprouts are also known to have essential amino acids and also contain antioxidants. 

Radish sprouts are known to be more dense in essential minerals than other varieties : manganese. magnesium, phosphorus, calcium, iron, copper, zinc, potassium, and selenium.
